I I think you'll find each suite does some things better than others. 
For example, Word Perfect is popular in legal offices, but they might
want to use PowerPoint for presentations or OpenOffice for ODF
compatibility etc.

You can tell by the file extension.  Word is .DOC and Excel is XLS.

Again, I have no idea about what happened with Quatro Pro.  However,
it's very easy to change file associations at any time, by following
these instructions:
Right click on file icon
Select Open With > Choose Program...
Check "Always use the selected program to open this kind of file" and
choose the desired application.
