Saying that the settings "must have gotten corrupted" seems to me a little like saying "the bad Fairy must have come along and hexed your computer." It explains, with no hint as to what caused this corruption, nor why it should suddenly come up one day, then go away to come back again at some indeterminate time.
Well, my crystal bowl doesn't give any further insight. Maybe you could locate the common.xcu and make a copy of that regularly. (Probably home/../.openoffice.org/user/registry/data/org/openoffice/UI ) Then, if the setting does get changed, you can compare those files. Really, I would have no idea what could be the cause.
