SQL Server is a Microsoft program. As such, I have grave doubts about

SQL Server is not a big issue - it is equivalent to saying you have a
MySQL database as far as OO.o is concerned.
The poster does not give enough information to give an answer.
If the UI is developed using MS Access ( Forms, Menus, Toolbars..etc )
and MS Access is used to generate reports then the answer is no - you
could not just replace OO.o for MS Access - the UI would need to be
re-written.
If the application simply allows a choice between MS Access / SQL Server
as the storage engine then
If you want to connect to MS Access then OO.o must be running on a MS
operating system. If you want to use SQL server, then OO.o can be on any
OS that has drivers for SQL Server, but the db server on a MS platform.
The next question would be however if it makes use of other parts of MSO
- Word / Calc and if so how?
