Deb (and anyone else reading): First of all, you'll notice that in the following message, I've concentrated on steaks, chops and burgers. This is because I turn all of my roasts into jerky!
Anyhow, soaking venison in milk for a few hours definately will do the trick for getting rid of the "gamey" taste if that's what you're concerned about. However, perhaps more important is avoiding the problem of cooking the steaks, chops and burgers too much. Especially the steaks and chops. Because of the extremely low fat content of the meat, if you cook either elk or deer past medium rare, you're going to very quickly wind up with shoe leather. Also, a good trick with burger is to have your meat processor "cut" it with either beef or pork tallow. Two reasons for this. First of all, most of the unpleasant taste of wild game comes from the animal's fat; reducing the percentage of fat in your ground meat that comes from the wild animal will help reduce the gamey taste. Second of all, the beef or pork fat will keep your burgers juicier. As far as spices go; my advice is to use whatever you'd use on a good steak that comes from a steer. Don't be "afraid" of wild game. It's certianly something of an acquired taste; but one that you should relish and not hide. That said, here's a marinade that I've found to be amazing on both elk and deer: 1/3 cup soy sauce 1/3 cup lemon juice 1/3 cup canola oil 2-3 cloves of garlic, minced 1 tbsp rosemary leaves 1 tbsp oregano 1 tbsp sweet leaf basil 1 tbsp parsley 1 tsp sambal chili paste (or use several dashes hot sauce) 1 tsp sugar or honey Several dashes worchestshire sauce ground black pepper to taste Mix all ingredients together and marinate steaks, chops or burgers for at least an hour. Then, toss meat on the grill, basting every now and then with the reserved marinade. Remember, don't over cook, or you'll have tough, tasteless meat! Anyhow, hope this helps!
