Any PostScript printer should work, not just laser printers. There are inkjet printers, image setters, etc, that have hardware or software PS RIPs.
All PostScript printers have PPDs, by definition. PPDs are plain text files and, in my experience, cross platform. If you find a Mac, Windows, UNIX, etc, PPD for your printer, it should work with a Mac OS printer driver. Also, many 68K machines running System 7 or 8 can use use an older version of the Adobe PS driver in lieu of LaserWriter 8. A PostScript printer connected to Mac that can share that printer should also work even if the printer, itself, doesn't support AppleTalk.
