Pages does not support folders. That and the difficulty doing something as simple as renaming a document, editing documents, etc., is why I think Pages is one of the worst excuses for an app out there. Especially because it is made by Apple, who can't seem to figure out how to make it accessible. They have done absolutely nothing about accessibility since it was first made available to the iDevices. As far as I can tell, they don't plan to either. You are better off sticking with an app that does txt files and sync them with DropBox or whatever and then bring them into your favorite word processer on your computer to do anything fancy with formatting, etc. Meteor Notes $2.99 supports all the folders you could want, as does PlainText which is free.
