Sounds like you simply need to reboot the phone. Press and hold POWER for a few seconds until the shutdown screen appears, then with VoiceOver, double-tap on the "slide to power off" control. After a few seconds, again press POWER for a couple seconds and wait until your phone reboots. Then try to open Mail again.
