Yes, iMessages definitely will use cellular data if WiFi is not
available.
If I may ask, why is WiFi disabled on your 4S? Is it not working any
more?

I think of text messages as SMS text messages, so they would count
against the text message limit of your cellular plan. I think of
iMessages as instant messaging, so they are part of your data plan
and not your text messaging plan. In that way, they are similar to
email.
