I use the phone feature on my iPhone very little but a few nights ago when I 
had made one of my very 
rare calls, I happened to notice "recents" and wondered what might be in there 
that I could delete, 
and there were calls going back to April 2015 which is when I first got the 
thing.  One year seems a 
very liberal interpretation of recent!

Indeed it is Daren; here’s how you do it:

1) Of course, have the Recents tab in the phone app in focus.
2) Locate the entry you desire.
3) Find and double tap the “More Info” button immediately after the desired 
phone number.
4) Depending on whether you want to create an entirely new contact or simply 
add the selected number 
to an existing contact double click the appropriate number.

That will place you into an edit dialog for the new or existing contact.
