You can't, I've been an iPhone user for a pretty long time and have been on this list for about as long, but never have I found such a setting anywhere or heard about it before. I guess one can use the 3-finger single tap gesture to hear what row one is on in the recents list and it will also give you the total number of rows, this would be the easiest way I can think of to find out how many rows/entries there are. Maybe 200 is the upper limit, I sometimes do a fair number of calls but it would probably still take me a month to get to that number before I can check whether it stops at 200 or not.
