You get things on and off the iPod the same way you do with the iPhone.
You can choose in iTunes to not have anything automatically sync to the iPod.
iTunes will show that you have two devices and you can select the one you have 
plugged in and only put certain things on it.
You do not have to enable mail on the touch.
I would strongly recommend, however, that you consider saving up for the iPod 
Touch 6th generation.
I don't know how much longer Apple will support the 5th generation and as one 
who has owned both, the 6 is worth it.
For your mp3 books, are you using Voice Dream Reader or just treating them as 
books through iTunes?

Audio described movies will show up in the video app if you are transferring 
them with iTunes.  Or, are these just mp3 files from Blind Mice or somewhere?  
If just mp3 files, again, Voice Dream Reader would handle them fine and you can 
get them on your device through DropBox rather than going through the pains of 
iTunes.

I too have an iPhone and an iPod for similar reasons.  I wanted to have a 
device dedicated to listening to music and reading books.  I find I do other 
things with it, but those are the main two things.

I am considering purchasing an IPod Touch, 5th generation. I do not want the

My reason for wanting to purchase an IPod, is so I can listen to stuff without 
interruptions.. For instance, I have a Spotify account. I want to put the app 
on my IPod, and listen to the music from my Bluetooth speaker.
Right now, when I listen with my phone, even though I mute the phone, some 
notices still come through. Even with the screen locked. So I am tired of this, 
and do not want it anymore.

Any help with all this will be much appreciated. I may have more questions to 
come. Especially when it comes to ITunes. I really dislike that program.
