There are quite a few gestures to learn. I am an old woman myself, but have had years of experience being blind. So, my concern is, how willing is she to try to learn some of the gestures? What does she want from an iPhone. Siri can do a lot for her, answer questions about how far something is from her location, open an app; but, she'd have to close the app. That means double-tapping the Home Button and swiping three fingers up, until the app, or keep doing it until all apps are closed.
In order to enter contacts, she has to go through the field. Just to stay simple, she could put one or two names in the first name field, then flick to add phone number. If this is challenging for her, if you could develop a contact list for her, Siri could make calls for her. Again, at the pharmacy, it could be difficult for her to punch 1 for pharmacy. These are just some of the things to face in order to use an iPhone, and to some, they are most intimidating. I think you said that she still has some vision, so that could be a bonus. You can go to accessibility and magnify the screen, which will limit how much that can be put on it, a disadvantage with an SE. Anyway, I hope we can be of help for you, and I also hope I am not sounding discouraging, just point out the big job ahead.
