Simon, your nieces are correct, if you use iMessage and send a message to another person who has an iOS device and has iMessage turned on or in other words if the message is sent as an iMessage and not an SMS or MMS then indeed mobile data is used. Of course if they use Instagram then they also use mobile data and probably a lot more than if they simply sent an iMessage especially if they first spend 5 minutes scrolling through everybody's latest posts and pictures.

These reportedly have protections against zero click attacks and thought I'd ask here before going through the effort myself. The apps are: Threema Telegram Messenger Signal Not sure about using Telegram Messenger because of its storing everything in the cloud and I do not trust cloud storage very much though.
