I've heard cases of people selling iPhones deleting them, but when the new buyer starts them, if the previous owner didn't sign out of their iClouds on the phone, it'll assume you want to continue working with the previous owner's ID. That's why it's very important to sign out nevertheless, just to be on the safe side. Good luck!
