How will you be using your mail? Will you be checking it from multiple devices? Will you be deleting mail and moving it into different folders on these different devices? Do you mind having your mail stored in remotely?
I don't use Exchange myself, but if you'll be working with your email from multiple devices, I'd recommend IMAP. I'm sure you can also Google for suggestions on when to use POP, IMAP or Exchange.
