I don't use Exchange myself, but if you'll be working with your email
from multiple devices, I'd recommend IMAP. I'm sure you can also Google
for suggestions on when to use POP, IMAP or Exchange.

You don't need the Gmail app from Google, although you can certainly use
that if you want to.

Gmail with your native iPhone email client for IMAP, POP and Exchange.
