This is definitely a good way to get rid of Voiceover temporarily and retain
the gestures, but it won't fix the issue the original poster asked about
which was to stop the phone call automatically switching to speakerphone.
Because a 3-finger double tap doesn't actually unload Voiceover,
speakerphone behavior is still the same meaning if you take your phone away
from your ear the proximity sensor will detect this and put the call on
speaker.

For a sighted person this is not standard behavior, if you take your phone
away from your ear he call remains on the earpiece until you tap the
Speakerphone button which of course is not possible for a blind person
without Voiceover.

I actually think it would be nice if Apple allows Voiceover users to toggle
automatic switching to speakerphone on or off because not everybody wants
the call to go to speaker automatically.

Here's how I do it and maybe it'll be of use to you.  I don't like
voice-over talking wile I'm on a call.  So, if I'm receiving a call, I'll
use a 2 finger double tap to answer the call and then a 3 finger double tap
to toggle speech off.  The only thing you have to remember is to do the 3
finger double tap again to toggle speech back on and of course, the 2 finger
double tap is also a toggle meaning you can use it to hang up as well as to
answer the call.  I will do the 2 finger double tap to answer the phone and
before I put the phone to my ear, I've already done the 3 finger double tap
to turn off speech.  It's as easy as can be and can be done quickly no muss,
no fuss, and your done.

I will try these suggestions when I have a few minutes later on this
evening. I have noticed that VO will speak when I'm on a call and it's most
annoying. Now, I have a method on how to turn VO off during a call. Thanks.
