I am just reading the first part of a book with 3 parts and you are correct,
if I go back once from the Now Playing screen to where all 3 parts of the
book are listed the progress indicator only shows up for the first part.
However, I think this is by design. Voiceover reads that information as
follows:

Part 1 by Kevin Anderson, narrated by David Collacci, 1 hour 18 mins lef
Progress, 81%
Part 2 by Kevin Anderson, narrated by David Colacci, 5 hours 38 mins
Part 3 by Kevin Anderson, narrated by David Collacci, 6 hours 44 mins

I believe in the previous version Voiceover would have announced "Progress,
0%" after the second and third part, but to me it makes sense that it
doesn't do this since I am reading the book starting at Part 1 and I know
that Part 2 and 3 are not even started.

In fact, if you back up one more screen to the main listing of books that
are downloaded to the device, it used to read "Progress, 0%" for those books
that weren't started yet. This is no longer the case; now Voiceover reads
the title, author, narrator and total time of the book and only gives a
progress indicator for a book that has been started. I quite like this
because it gives you a simple and clean list you can flick through.

However, if I look at the listing of my library in the Cloud, I see some
inconsistencies. Voiceover will not read the "Progress, 0%" indicator after
a book that has not been started which is consistent with the parts screen
and I think as it should be.
However, for books it announces as finished, there still is a "Progress,
100%" after the book title. In fact, I just noticed a couple of books I
finished and it says for one book there is 1 minute and 27 seconds left, it
then says "Finished" and "Progress, 100%".
For 2 other books I finished recently and for which I know for a fact that I
let it play to the final "Audible hopes you enjoyed this production"
Voiceover tells me there are 27 mins 7 seconds and 29 mins, respectively,
left and for both it shows "Progress, 98%". 
There seems to be some inconsistency in how the app keeps track of the time
remaining and I'll report this to Audible. I think once a book is Finished
it should just read the title, author, narrator and then the total time of
the book followed by "Finished".

I like the new update. I have noticed, and htis may not be related to
the update in any way, but the progress indicator on the screen that
lists each part of the book, is missing from the last part. Many of
the books I get are 2 parts. I can flick right through the screen and
hear the progress of part 1. But after I pass part 2, instead of a
progress indicator I move to the next item. I haven't explored that
particular screen to see if it is showing up at all or if VO is just
skipping it for some reason. Not a big deal, but I do recall being
able to view the progress of both parts of the books before the
update. I do really like the indicationof which chapter you are on
when listening to a book, and like the announcement of "Chapter 6 of
12."
