Where is your phone while you're walking? I used to keep my phone in my
left pocket turned upside down with the screen pointed toward me and I had a
terrible time with Bluetooth. I now use a fanny pack and carry the phone in
the front pocket. This has helped immensely.
This seems to be more an issue with Bluetooth connectivity than with the
Bluez, because I have another pair of BT headphones and have similar results
with the phone in my pocket.

I have problems when walking with my aftershokz blue s outdoor, the headset
loses the connection to my phone, or maybe the opposite happens that it is
the phone loosing the connection. Does anyone know something about that
problem. I have an IPhone 5, as it is now the headset is useless outdoor.
