If you update iTunes then IOS 7.0.3 will still work. Sometimes you have
to update iTunes in order for it to work with newer versions of IOS. For
example, I couldn't update to IOS 7 until I updated iTunes first.

You just won't be able to sync with that device until it has been updated,
plus iTunes will remind you of the update so you sure won't forget grin.
