If I understand you correctly, then what you want to do is as follows:

1) Install the SERVER on your customer's PC (locked down tight to not 
accept incoming connections).

2) Install the VIEWER on your PC.

3) On your PC, run the VIEWER in LISTENING mode.

4) You customer then initiates and "ADD NEW CLIENT" command which 
allows him to show you his desktop.  It will appear automatically as a 
window on your desktop when the connection is established.

This way round, the customer has to actively elect to reveal his 
desktop to you, you can't just some along and watch it whenever you 
feel like it.

Another advantage is that all the firewall management is done at your 
end since the connection is established from your customer's end.

There is no reason why this shouldn't also work when tunnelled over an 
encrypted connection and is probably encrypted by default in the 
paid-for versions of VNC.

You'll find details of port numbers, etc. for these "reversed" 
connections in the documentation.
