Hi Adrian I had been having the same problem with stuttering Youtube videos. This Apple Support Discussion gave the solution that worked for me https://discussions.apple.com/thread/3729955?start=0&tstart=0
Go to Safari>Reset Safari… tick all boxes and click Reset. This did the trick for me, the Youtube videos now play smoothly. Worth a try!
