It probably could be a lot of things, but increased appetite, shunning the litterbox, and odd behavior are classic signs of hyperthyroidism, IIRC. I'd recommend you ask your vet. We've had our Maine Coon on thyroid medication for about 3-4 weeks now, and he's using the box all the time as of this week.
