Well, a chevron is a kind of arrow.

Google on 'chevron symbol' for a selection. It's roots are in mathematical 
symbols, I believe. It's often used in trademarks such as for Citroen cars.
The use is Office is mentioned here:

FWIW, it's gone in Office 2007... but so are most menus too. ;-)

Can't suggest what you search for as far as the other things you want to know

I looked at Firefox and IE, and they call it an arrow. The only reference to 
'chevron' at microsoft.com is in a programming area.

Well, I tried "What do you call the little V-shaped thing at the right of a 
drop-down menu" and that was fruitless. (And, I find, those are not drop-down 
menus!)

What search string do you recommend?
