An octet isn't limited just to IP address notation.. it can be any group
of 8-bits. It's also commonly used to describe segments of a packet or
"fields" in a header, but can also apply to data.
Octet is usually the equivalent of a byte but not necessarily. With the
advent of minicompters in the 60s, a word was 16 bits and a byte was
half a word.  When word lengths grew to 32 and 64 bits, the meaning of
byte became ambiguous... sometimes a "byte" meant 16 or even 32 bits. So
"octet" was coined to eliminate confusion.
