The browser that parses out labels is Webbie. Download it and try it out for yourself: http://www.webbie.org.uk/
Placeholder text is still useful in Lynx, and I think using a little js to clear the field on-focus in modern browsers is a great compromise (although I'd attach it as an event rather than coding each individual input field).
