I think Paolo has a point there.
  -32768 means "no data". So the "correct" way to get the coastlines 
would be vector data.

However I think the other solutions will work in most parts of the world 
since:

"The dataset available online has been cut for shorelines using the 
Shorelines and Water Bodies dataset (SWBD) that accompanies SRTM 
topography data."
(quote from http://srtm.csi.cgiar.org/SRTM_FAQ.asp )

Whatever solution you choose, there might be other areas of the world 
with -32768 that are no ocean.
How accurate is the SWBD used to clip the DEM?
