I share your pain. I'm teetering on the edge of giving up and abandoning Entourage for Apple Mail/AddressBook/iCal, but there are things in Entourage that I'd sorely miss (Categories, for one). My own uniformed guess is that it's extraordinarily difficult to put things into the right cubbyholes in databases that are fundamentally different in their underlying design (iCal's multiple calendars vs. Entourage's categories; they do many of the same things, but they're implemented SO differently that reconciling them through a sync process may be impossible). If you ever DO get a satisfactory resolution of this, there will be many, many of us waiting to hear about it!
