There's another way to do that. IMAP olders that are "subscribed" are
displayed in the folder list at the left side of your browser window. Their
labels are also drawn in blue in the list on the right side of the browser.
"Unsubscribed" folders have their labels drawn in black. To subscribe to a
folder, control-click on it, and in the popup menu, select "Subscribe".
Then it will appear in your folder list.

Diane, did you come across any solution to the issue that I brought up in my
original post? I would like to enable different column sets for IMAP
folders that share a common parent folder, and it seems that I cannot. The
subfolders inherit the column set of the parent.

In general, the user interface for enabling/disabling columns is horrible.
It should be done in a dialog, which can be brought up for any folder,
allowing the user to select the column set for that folder, and the order of
columns within the set. I hope this gets changed for Outlook 2011 (or
whatever the next reincarnation of Entourage is named).

Quiz question for the list: can you name all the previous incarnations of
Entourage 2008? Hint: more than one company involved.
