Okay, I'm thinking you may be in a different screen and that may be why you're not seeing any /Server/Windows. Try this:
On the left hand side of the screen click the "Device List" link. Somewhere in the list you should see your machines you're trying to fix. Click the check box for all of the ones you want to be "/Server/Windows". Now, click the little down-arrow which brings up a menu of choices... Choose the "Move to class..." selection. You should now see a dialog that lets you pick from a large list of different types of devices, pick the "/Server/Windows" from there. If you're not seeing that as an option, I'd suspect there's something wrong with your installation, but I'm guessing first you were just in a different screen. Let me know what you find. (Oh, and after you move the machines to the new host, you have to "re-model" them.
