Ok, never mind. This is a bug. The gregoriotex-chars.tex file is not included in the distribution archive.
I just created https://github.com/gregorio-project/gregorio/issues/232 Would you still let me know the result of sudo kpsewhich -var-value TEXMFLOCAL for improvement of install.sh ?
