That sounds like a fun trip!
I envy you. :-)
We've been to Paris many years ago, and keep planning on coming back.

There are two things that I could recommend:
1. It might be obvious, but ... there is a large department store that has
a very nice view from the top floor, and it is very close to the river, so the view is great. The restaurant is rather expensive, but we went there just for a few minutes when it was not too crowded, took a few photos and left.

Last night I was trying to figure out if it was Printemps or Galleries Laffayete. I believe it is the former.

2. There was (and still is, from what I can tell) a restaurant that is off the tourist path. I've learned about it from a personal contact.
I see that now it is rather famous (on Trip Advisor, Yelp, etc.)

It is a smallish restaurant. So, it's better to make a reservation via the phone (we called in the morning). It is one of those places where there is only one "seating" per night. My rather rudimentary knowledge of French did not allow me understanding some parts of the menu. They either didn't have an English version, or what they had was incomplete. So, the owner himself was helping us placing the order. He is a very interesting person himself. And the food was great (and reasonably priced) - but it's been a decade ago...
