I never noticed until I had a HiDPI screen (MacBook Pro with Retina
screen), but the default favicon for XMLUI and probably JSPUI is pretty low
definition.
Right now we're using 16x16 pixels, but we should be using something more
like 48x48 or even 128x128, see some examples:

Now, the DSpace documentation is 100% wrong in several places with regards
to the setup of OpenSearch... for example, I had to define
and manually re-run
`filter-media' as well as `index-discovery -b'
What could I be missing?

In this case the dspace script respects the environment's JAVA_OPTS if it
is set; the one in the script is only used if JAVA_OPTS is empty.
