This is just a personal preference,  but saving data as a data  file
within the programs themselves that created the data is as unsafe
as leaving the data on "C".  If you get a misbehaving program  you
can lose the data.  
 
If you save all your data created to sub-folders in the My Documents
folder and you have a Program failure,  your files are still safe and  you
just need to re-install the program.
 
The My Documents  folder is best moved off drive "C" to another
drive or partition using the Windows "move" command.  I have had
Windows and program failures but never a Data partition.  There  are
other things you can and should "move" off  C such as "My  Favorites"
and eMail folders,  and address books  etc.
 
Then I would sync my stuff to a slave drive or external drive using
Microsoft "Synctoy",  Part of the Microsoft series "Power Toys  for
Windows".    Pictures should still be Mastered to a CD/DVD  drive.
 
An second drive is more secure than a second partition because
of the possibility of a Mechanical  failure although I personally have 
never seen a mechanical drive failure, but I know they happen.
 
Except for mechanical failures,  Data in a second partition can  still
be read easily,  even if windows won't boot,  by placing it  in
another machine or cheap drive case.
 
My personal rule is never leave data on the OS drive or saved in
a program.
