I am sympathetic with what you are saying and use text editors or word 
processors for most of my work.  Unfortunately, style over substance will 
usually win.  I seem to recall being an over-enthusiastic computer user in 
elementary school, but (for one project) I realised the difference between 
getting the project done on time and piddling on the computer -- so half of 
the project was done on computer and half by hand.  The teacher did not 
appreciate that.

Nowdays, I give a lot of general astronomy talks and always dress it up with 
pretty graphics (as does everybody else in the department).  People are 
attracted by the pictures and the prospect of looking through a telescope, and 
not with the actual content.  (Well, a few people are.  That is what makes the 
public tours bearable.  ;-)

And I seem to remember something about my mother's employer, who was always 
sending financial reports back for better formatting or a change of colour.  
There was no reason why to do this since the original reports were clear and 
was typical for bookkeeping, but that is the way things are.

So while I agree with what you have to say, I simply have difficulty relating 
it to the rest of the world!
