Be careful. Some 6.x and 7.x workflow will not work with the 5.x client. Fields that are set as Drop List for Menu will not display correctly. There is also a known issue with 7.x server set for uni-code and memory leaks with older clients.
I don't remember the other issues off the top of my head.
