Not sure what 'theory' says that it 'should' sound better than a Touch; maybe it will, maybe it won't. Depends on all sorts of things. If the DAC is sensitive to other software running on the computer it is not a good omen imo. Minimising latency is important in studios (where they use s/pdif); async USB has (relatively) enormous amounts of latency in any case so you should be able to run whatever you like on your laptop, otherwise how can the async USB convertor you propose be doing it's job of decoupling the DAC from the netbook.
