On topic , I ( cynically ) would not expect a high end hifi store to have any clue on what sounds good.
The whole audiophile mindset prevents any progress or comparisions that are universal . They are simply interested in selling expensive high margin products that are percivied as good by their custommers due to the viral marketting of "high end" this is a closed system, no reality in it. I have not compared anything myself I've used my Touch in analog mode once when my dac needed repair, it sounded quite good for it's price. i use my SB3 with analog outs to my kitchen system, but it is not good enough to make any source sq differences obvius ( this is the case with 99% of the installed base of stereos a reasonable ok source is indistinguishable from another such source ).
