Unless I do that transference compulsively - constantly bringing stuff
back to EV every time I think of it, sort of like an insanely kludgey

This is a *start* on something constructive, but it's not with
an open mind. Have you considered any of the possibilities with
AppleScript, especially when combined with Attachment Scripts
(or Menu Scripts).
I've not used Evernote, so won't comment on that. But what about
using Yojimbo with some custom AppleScript:
- use Yojimbo's powerful tag/search features to find your text snippet
- use key shortcut to open that text in BBEdit
- edit away, leave document open, quit bbedit, come back later,
etc, etc
- close document (and magically watch your changes appear in Yojimbo)
Except for the key shortcut to open text from Yojimbo in BBEdit,
how is that workflow any more onerous than what you have now?
Assuming I'm understanding your "problem"; it seems to be a much
better workflow.
I'm not going to describe (right now) how to make the above
workflow; I'm not convinced you really want a solution. But if
you are actually looking for a solution to a defined problem (&
I've understood the definition), then I'll outline the
requirements for the above workflow.
