Hi, you need a TeX distribution. TexShop is only a frontend to the binaries, in a way BibDesk does the same thing as TexShop. A good starting point is http://www.tug.org/twg/mactex/, assuming you don't have another TeX distribution on your system (via fink or the like), you could also start with the MacTeX Package which is available from http://www.tug.org/mactex/.
For questions regarding TeX on the Mac, the better place to look around for help is the Mac-TeX list (see http://email.esm.psu.edu/mailman/listinfo/macosx-tex).
