One of my friends had a similar problem with their machine.
Brew group boiler on the machine was dead and did not heat up, they took it
in for repair and when it came back asked me to some look at it as they
were having problems.

The suppliers had replaced the thermostat with a PID on the machine and all
appeared to be working but there was a problem.
The PID showed the correct temp but the machine was flash
boiling continuously when you pulled a shot.
The Brew boiler was obviously running way too hot.

Eventually they managed to track the issue down to some incompatibility
between the temp probe and the PID unit.
The PID thought it was at the correct temperature when in fact it was
running much higher due to it having the original probe still in place.
They changed the probe to the correct one for the new PID and all worked
100%
