Hi Ian, This sounds *exactly* like the problem I used to have with my IV-R. I seemed to have got that problem fixed but am now running into different problems with temperature dropping but that is another story.
When I had the problems similar to yours, my PID was bouncing around all over the place. It would go to 930 degrees Celsius, back down to 60 etc. I too was told perhaps the problem lay in either the PID or the temperature sensor. I replaced them both but it did not help. I'm wondering Ian if it might be as simple as a reset on both your brew and steam boilers. There is a small peg on both of them that you can push and it will reset it if gets 'tripped'. Another thing you can try is to test if your boilers are getting voltage. You can use a digital multimeter to check if both the steam and brew boilers are getting power.
