So just for my curiosity, is your existing wand a no-burn?

By the way, you had mentioned Schomer's technique, and yes, I think it's 
outdated for the foam knife. Your mileage may vary but try what I mentioned and 
see what you think--that was straight from two of his baristas speaking 
specifically on the foam knife. The clockwise thing is really just a matter of 
which side the wand is on; it makes no difference otherwise. When I lay the tip 
against the side (whether at an angle or not) it is splitting the pitcher in 
half, if that makes sense, so it causes sort of a dual vortex. Also, when 
steaming my wife's chai (directly in a mug), I stretch just long enough to 
quiet the tip, and then bury directly in the center of the mug with the tip 
just a bit off the bottom, pointing more or less straight down. This allows me 
to set it down on the drip tray and do something else without it blowing chai 
over the side of the mug. This technique works pretty well for milk too, but 
the foam seems to be a little looser. Hmmm.
