I have tried several beans but none are the answer.  Just ordered another batch 
of beans to try and intend to fiddle with pre infusion and water dumping to 
drop temp a bit.  We’ll see what happens.

The usual rule of thumb is that the shots will be  bitter if the temperature is 
too high.

Maybe try lowering it a few degrees.

 

On my B II I also find that if I have not backflushed recently the shots get 
bitter.

I suspect that you have already tried backflushing.

 

Finally, I noted that a recent batch of beans were very bitter. I dumped them.

What beans do you use? Are they from anatisinal roaster?

I upgraded to a Kafatek and it made a world of difference. I have a BII and a 
GS3 with the manometer and you'd be hard pressed to decide which is the better 
cup.
