It means that when science is presented as fact, it is not being true to what science is and is falling into the dogmatic domain of religion. Science is about theory. Gravity is a theory. Evolution is a theory. We are giving the evidence that we've found to date in a structure that explains something as we know it. We've rewritten the theory of gravity a bit since it was first put forward and the same goes for evolution. Given time and a book or two from home I can point to various holes in the theory of evolution that brings up doubt, but that's neither here nor there. Saying that life was not created or directed but instead evolved without saying that it is a theory is a statement of fact that goes against science and is a direct challenge to religion. Too many people present evolution as a hammer against 'those bible nutz' which causes those same people to react the way they do. Too many teachers present science as the solid, end all facts of reality. This is a disservice to their students. Look at the huge number of religious scientists who can both believe in God and the theories of science. I can give you a list of a few dozen noble prize winners (in science) from my religion alone.
