Ok, this could run and run....
Out of the list you quote there ("Beyond Good and Evil", "Metal Arms",
"Primal" or "Ghost Hunter") the first two are available on Xbox (and GC),
the other two I don't know.
Good that you noticed most of the PS2 exclusives suck, but claiming that 99%
of anything sucks in factually incorrect, and even if it was it is hardly an
excuse.
While it is true that in a two horse race (sorry CG owners) one does not
have to suck, but in this case one of them does, sorry, but it does and to
claim the PS2 holds it's own is nonsence. Visually it stinks, pick any
developer who actually codes for two separate consoles (rather than just
porting the code from one) and you will see the diference, the oldest
example being splinter cell but you could just as easily use Need For Speed
Underground 2 if you prefer a newer game.

The absolute best platformers out now are PS Exclusives ("Sly Cooper",
"Ratchet and Clank" and "Jak"). If you're an RPG fan there's really only
one console to choose ("Final Fantasy", "Hack", "Dark Cloud", etc).
Take a look through the archives for the raves that "Katamari Damacy" has
received.
I've said it before, but it's worth buying a PS2 JUST to play "Ico" and I
assume it will be worth keeping to play team Ico's next loooong awaited
release ("Wanda and the Giants").
Many game series ("Grand Theft Auto", "Silent Hill", etc) make their debuts
on PS2 months before xBox (if ever) and are not remarkably aided by
incremental graphics improvements.
I don't believe that "Beyond Good and Evil", "Metal Arms", "Primal" or
"Ghost Hunter" had XBox equivalents, but they were all great games.
There are quite literally hundreds (if not thousands, especially if you
count the PS1 library) of games available for the PS2 but not for XBox.
Sure, most of them suck - but 99% of anything sucks.

I just don't see why they have to mutually exclusive. Yes, the XBox is VERY
GOOD. But so in the PS2. One doesn't have to suck for the other to be good
- that can both be good! Isn't it a wonderful world where two things can be
good at the very same time. (Actually three things since the Cube is far
from out of this especially after Metroid Prime II kicked so very much ass.)
The PS2 is the oldest and most popular console in this generation. Of
course the other offering will be technically superior, but the simple fact
is that the PS2 is holding its own, even visually, against them and, much
more importantly, still producing incredibly high-quality games.
