The only bits of wisdom I have for you is:

When converting EPS to JPG, remember that you need all of the fonts used in the
EPS file available on the machine generating the jpg.
Ghostscript does a doozy of a job converting ps and eps to jpg and pdf. It can
be easily controlled by cfexecute calls. It has a very nice batch ability. And
it is free.

I need to create a web based interface that allows our less technical users to
change text in an EPS file and then display a JPG preview of the file.
