You probably can get andouille there, but if not, a nice Polish kielbasa
works too.

The important part of making gumbo is to get the roux right.  Lots of great
recipes floating around the net.

I make gumbo in a very different way, with shrimp, scallops, chicken and
andouille, and I use asparagus instead of celery because I hate celery.
