Ideally, I would like to see the State get out of the marriage business entirely and stick with something it has more experience in, approving and enforcing contracts. If two people (or three people or whatever) want to form a union in which they share resources, designate caretakers, etc, I think that should be done by straight forward contract law. Establish the legal structures and enforce them in a non-discriminatory fashion like creation and dissolution of an LLC. There are some specifics that would be needed for this sort of contract law (corporations don't have child custody issues) but they should be fairly easy to work out I'd think.
Then leave the "marriage" part to social institutions. If the Catholic Church doesn't want to marry two men, fine by me. If the Unitarians want to bless the joining of two women, awesome. If the 24 Hour Church of Elvis (whose departure I am most saddened by) wants to marry a man and his peanut butter banana sandwich, then I say go for it.
