Hi Gel-

the green stuff is called Wasabi, it's a variety of 
horseradish and (as you know) very hot.

The rice is a medium-grain rice and yes, it sticks 
together. And yes it's steamed. They may flavor it with 
I think lemon grass. Not sure.

The white, transparent rolls are made with rice flour 
instead of wheat flour.

And Vietnamese recipes tend to used concentrated fish 
oil. A pint bottle of that stuff constitutes a HazMat 
condition IMHO <g>.
